Tasting notes

Appearance: Bright with a deep purple/ruby core lightening toward the rim and showing moder-ate plus viscosity with slow forming highly stained tears.

Aroma: Highly aromatic, with rich, ripe black cherry, brambly blackberry jam with vanilla, dried herbs, cracked pepper and smoky cured meat savory notes.

Palate: Dry, full-bodied with rich, ripe black fruit on the entry mixed with sweet barrel spice. Complex savory dried herb and smoky, meaty elements emerge on the mid-palate with chewy tannins that provide a counter point to the wine’s ripe fruit character along with a pleasant freshness on the palate that continues through its long finish that’s a mix of sustained ripe fruit, spice and savory elements. Somewhere between the rustic and sophisticated, TRILATERAL is a fine pairing with Manchego cheese and charcuterie, or with a roast leg of lamb studded with garlic, simply seasoned with salt, pepper and rosemary. TRILATERAL also pairs beautifully with vegetarian dishes, including mushroom and lentil pot pies seasoned with garlic, sage and thyme and a Gouda biscuit topping.


Food pairings

TRILATERAL is a fine pairing with Manchego cheese and charcuterie, or with a roast leg of lamb studded with garlic, simply seasoned with salt, pepper and rosemary. TRILATERAL also pairs beautifully with vegetarian dishes, including mushroom and lentil pot pies seasoned with garlic, sage and thyme and a Gouda biscuit topping.
