“2010 JUSTIN Paso Robles Cabernet Sauvignon ($26; 13.9%): When Justin Baldwin founded JUSTIN Vineyards in 1981, there were fewer than 10 wineries in the Paso Robles appellation. This release features ripe dark plum, raspberry and dried fruit aromas that give way to sweet oak, berry and cherry flavors. A somewhat lean, high-acid style with slightly grippy tannins on the finish.” —Lynne Char Bennett

“Much more complex is the 2010 JUSTIN Paso Robles Cabernet Sauvignon ($26), with ripe black raspberry fruit, good texture, mild tannins and a chalky finish. Well-structured, but not tightly structured, it also has notes of mocha and chocolate. Ideal to serve with a rare filet mignon.” —Roger Morris

Sip and Stay – The JUST Inn

“The four-room inn at this esteemed vineyard in Adelaide Valley, west of Paso’s pint-size downtown, has a formal feel, with stone fireplaces, tapestry curtains and leather armchairs in the rooms. Included in the stay is a 45-minute tour and tasting that virtually covers the complete winemaking process—from crush pad to tank room to 16,000-square-foot wine caves—and includes a glass of one of the vineyard’s wines, like the Bordeaux-style blend, ISOSCELES.” —Tanvi Chheda

    Red, White, and New

“If Sauvignon Blanc isn’t the perfect Summer wine, I don’t know what is. Bright and lively, it tastes exactly like a July afternoon. JUSTIN’s features shades of citrus and tropical fruits, and there’s a little bit of Spring grass on the nose, too. Pack a picnic with this one; it’s a screwtop, so skip the corkscrew.”
