2008 Guest Chef Dinner Series - Guess Who's Coming to Dinner?

Since 1990 JUSTIN Vineyards and Winery has celebrated the joys of food and wine by inviting some of America’s most celebrated chefs to visit the winery and display their talents. JUSTIN Wine Society members are presented the first opportunity to sign up for these events but they are open to one and all. ALL Guest Chef Dinners are held at JUSTIN Vineyards & Winery. You must hurry though, because reservations fill up quickly. Just contact us and we'll be happy to reserve a seat for you! Following is the year’s line-up:

Jason Wilson: Crush - Seattle, WA

In 2006, Chef Jason Wilson was declared one of the Top Ten New Chefs in North America by the prestigious Food and Wine Magazine. The Wine Spectator’s 2007 Award of Excellence was awarded to Chef Wilson’s restaurant, Crush. In 2006, Seattle Magazine rated Crush “One of Seattle’s 10 Very Best Restaurants”. Chef Wilson considers the kitchens of Flying Saucer, Aqua, and Stars his main influences. Crush was noted on MSN.com as #3 on the top ten list of new restaurants in 2005, received the honor of Best Wine List on Citysearch Seattle, 2005, and was listed as one of Seattle Magazines 10 Very Best Restaurants in 2006. Chef Wilson has been featured on TV shows including Martha Stewart, Rachel Ray, Fine Living, and Chefs A’Field.

Tom Gray: Bistro AIX - Jacksonville, FL

Chef Tom Gray has worked in the kitchen of wildly popular Asylum in Beverly Hills and at Wolfgang Puck’s Delicias in San Diego. He joined the team of New York City’s venerable Zoë restaurant in 1992 and was tapped by Paul Satory to be Executive sous Chef at the Wine Spectator Greystone Restaurant at the Culinary Institute of America’s Napa Valley restaurant in 1994. Bistro AIX was one of just 59 recipients of the Distinguished Restaurant of North America Award of Excellence in 2004; Bistro AIX has also won the Wine Spectator Award of Excellence. Jacksonville Magazine bestowed Bistro AIX with their Top 25 award in the September 2006 issue. Bistro AIX earned the titles of "Best Restaurant" and "Best Atmosphere” and Chef Gray was awarded this years "Best Chef" trophy from the Weekly’s Best of Jax 2006. Download Menu

Daniel Bruce: Meritage, Boston Harbor Hotel - Boston, MA

Internationally-renowned, Chef Bruce was selected as "Chef of the Year" for Boston by Chefs in America, and in both 1992 and 2001 was honored as one of the "Best Hotel Chefs in America" by the James Beard House. Bruce is an honorary member of Chevalier du Tastevin and has been recognized by Boston Magazine as the city's Best Hotel Chef. Chef Bruce’s passion for food and wine launched the Boston Wine Festival, the nation’s longest-running food and wine pairing series. As the youngest executive chef in the history of the famed “21” Club, Chef Bruce’s dream was to open his own restaurant; this dream became a reality with the opening of Meritage. mk was the culmination of a dream for three-time James Beard Best Chef of the Midwest nominee Michael Kornick. mk restaurant is a AAA 4 Diamond and one of only 300 Ivy Award winning restaurants with seasonal, chef driven menus and a Wine Spectator recognized wine cellar. The restaurant is considered one of the top 7 dining spots in Zagat eight years in a row. mk is one of the top American restaurants in Chicago, it's been awarded the Fodors Choice award and is one of Conde Nast Traveler’s "50 Hottest Restaurants in the World". mk was called “a modern classic” by Gourmet magazine and named as one of the restaurants in its “Where to Eat Now in 18 American Cities” article. mk was named to Esquire’s “America’s Best New Restaurants” list in 1999, and has won acclaim from Town & Country magazine, USA Today, and Crain’s Chicago Business. Chef Erick Simmons, formerly of Bradley Ogden at Caesar’s Palace was handpicked by Chef Michael Kornick to continue the mk vision.

Stephan Pyles: Stephan Pyles Restaurant - Dallas, TX

Chef Stephan Pyles was the inaugural recipient of The James Beard Foundation’s award for Best Chef in America-Southwest and has received numerous awards including the AAA Five Diamond Award, Nation’s Restaurant News’ Fine Dining Hall of Fame Award, Restaurants and Institutions’ Ivy award and the American Academy of Achievement Award. He was chef-owner of both Routh Street Café in Texas and Goodfellows in Minneapolis and received the outstanding restaurateur award for both restaurants from the Texas Restaurant Association and the Minnesota Restaurant association. In 1994, Pyles opened Star Canyon, and during his tenure it was on the lists of "best new restaurants" in Esquire, Bon Appetit and Town and Country. In 1997, Pyles opened AquaKnox, a global seafood restaurant, to critical acclaim and it was named best new restaurant by Food and Wine. As a founding father of Southwestern Cuisine, Chef Pyles was the first Texan inducted into the James Beard Foundation’s Who’s Who of Food and Beverage in America. He was named “Chef of the Year” in 2006 by Esquire magazine and in addition to writing numerous cookbooks, he has appeared on Good Morning America and The Today Show.

 

 

ALL Guest Chef Dinners are held at JUSTIN Vineyards & Winery. Dinners begin with a reception at 6:30pm followed by dinner at 7:00pm
Each seat is $150 per person or $120 per person for Wine Society members. Members are allowed a total of 4 discounted seats.
